Friselle are an ancient Apulian dish to be seasoned with tomato, oregano, salt and extra virgin olive oil. This type of frisella, being crumbly, can also be seasoned without being soaked in water.
They make a good meal to eat cold, without cooking. Simple, tasty and light for a tasty appetiser.
It was founded on 20 April 2007 with the aim, as stated in the statute, of creating, managing and promoting the production chain of Capocollo di Martina Franca and sharing the inspiring principles of the international Slow Food movement.
