Autumn Diet: There's Room for Cured Meats

Autumn is one of the most nostalgic and melancholic seasons, but also the most magical and quiet one of the year whose onset makes nature color a thousand different shades, heralds the onset of the first cold weather, brings back the desire to stay at home and enjoy the warmth and warmth of family affection, and also changes our nutritional needs that require a diet appropriate to the season and context.

Fall nutrition consists of foods rich in vitamins, minerals, and substances that protect our immune systems and our bodies from parasites and external agents that cause colds, flu, and seasonal ailments.

The autumn table, however, in addition to fruits and vegetables, also gives free space to cured meats, which are particularly appreciated for their versatility as they allow you to prepare quick and healthy snacks and lunches in a few minutes, which can be conveniently taken to school or work. In addition, with cured meats you can also prepare traditional Italian dishes such as carbonara, gricia and amatriciana, which you can make unique by using Guanciale Martinese or sweet or smoked Martinese pancetta tesa from the Cervellera butcher shop.


Cured meats, particularly popular during the fall season, include capocollo di Martina Franca aged up to 180 gg, perfect when paired with altamura bread with burrata and capocollo; prosciutto crudo aged 18 months; schiacciata in crusca aged 60 days; and capocollo Gold, with its intense aroma and delicate flavor. All these products are available at the Cervellera charcuterie factory near Martina Franca.
